I’ve always loved a green salad, but ever since my dear friend April shared this easy and healthy salad dressing recipe with me, my love for green salads has doubled!

Most store-bought salad dressings have too many ingredients which my tummy cannot tolerate. Never mind, because this dressing is super quick to make and I know precisely what the ingredients are 🙂

I use a fragrant and fruity Ligurian virgin oil, a great d.o.p. Riviera Ligure oil which is produced exclusively from taggiasca olives. These small, fruity Ligurian olives make a premium quality oil. It’s smell is delicate and sweet and suitable to accompany any type of dish. One might ask why use such a high quality oil to make a dressing ? It goes without saying that higher quality olive oil is going to taste the best.

Balsamic vinegar is a bold choice, but gives a wonderful sweet flavour to the mix. This balsamic vinegar is made in the Modena region of Northern Italy.


The mustard I used is created in a style similar to dijon, with just a few variations. Apart from making a part of your dressings this great tasting mustard can be used as a sauce or dip and works especially well with cold meat and sausages. I find this mustard give my salad dressing a tangy flavour.


Here are a few ideas for some add-ins :

  • Pinch of mixed herbs
  • Salt and pepper
  • Chives
  • Garlic
  • Crushed red pepper flakes 


Add all the ingredients to a jar, screw on the lid and shake for a few seconds :  ta-da, this healthy, tasty dressing is ready to use.
